More Options from eMeals: plus garlic shrimp and linguine recipe

eMeals has been rolling out quite a few new programs in the past few months. I'm honestly most excited for their new Costco Family Plan. This is great for people (like me) who already have a Costco membership but have always felt like regular grocery shopping needs to be done at a traditional grocery store. The plan is super helpful in that it even gives tips on how to break up and store all the food you'll be buying - even better since the plan accounts for two weeks at a time instead of only one.

I don't mind grocery shopping (although, I admittedly get to go alone), but I know some people who absolutely dread it. Who wouldn't appreciate only having to go every other week? Think of the time it frees up to do more important things. Like read. Or nap. I could so go for a nap right about now...

Well, cutting calories should never mean starving, and it should definitely not mean having to eat bland, unappealing foods. So here is a little recipes for the eMeals Low Calorie Plan that I'd like to share:
Low Calorie Garlic Shrimp with Blistered Tomatoes and Linguine via @emeals

I don't actually like seafood in general. Except for shrimp. I like shrimp. I can't explain it. It's sort of like the bacon of the sea for me. Sort of. Either way, this looks so good.

Low Calorie Dinner Recipe: Garlic Shrimp with Blistered Tomatoes and Linguine
Ingredients
  • 12 oz uncooked whole grain linguine
  • 2 pints cherry or grape tomatoes
  • 2 tablespoons olive oil, divided
  • ½ teaspoon salt, divided
  • ½ teaspoon crushed red pepper
  • 2 tablespoons butter
  • 2 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup crumbled feta cheese
Instructions
  1. Preheat broiler.
  2. Cook pasta according to package directions.
  3. Meanwhile, toss tomatoes with 1 tablespoon oil, ¼ teaspoon salt and red pepper on a rimmed baking sheet.
  4. Broil 4 to 5 minutes or until tomatoes burst.
  5. Melt butter in a large skillet with remaining 1 tablespoon oil.
  6. Sprinkle shrimp with ¼ teaspoon salt; saute shrimp and garlic 2 to 3 minutes or until shrimp turn pink.
  7. Toss shrimp with tomato mixture.
  8. Divide pasta evenly among 6 shallow bowls.
  9. Top with shrimp and tomato mixture.
  10. Sprinkle each serving with cheese.
